Is there any better flavor combination than chocolate and peanut butter? It’s hard to believe that there could be a more delicious pairing. However, adding oatmeal to the mix is pretty perfect, too. No-bake chocolate oatmeal peanut butter cookies would be worth a bit of effort. But they come together in a matter of minutes without even turning on the oven.
Jake’s paternal grandma made these no-bake chocolate oatmeal peanut butter cookies for decades. She was kind enough to send me her recipe. Now I’ve been making her recipe for over a decade. I’ve never added or swapped out an ingredient or attempted any other sort of variation. It’s one of those simple recipes that’s so good it doesn’t need any improvement.
The no-bake chocolate oatmeal peanut butter cookies are gluten-free. Gluten-free doesn’t mean healthy. But it does mean they’re a great option for a little indulgence if you’re eating gluten-free or you need a last-minute dessert for a classroom party or other social gathering with people in attendance who are eating gluten-free.
Usually, Apollo is my photography buddy. Hobbes was my photography buddy for this blog shoot. I photograph food every week for the blog or Instagram. But something about this cookie shoot was really exciting.
With or without a kitty helper, if you bake regularly, most likely you already have the ingredients to make these cookies on hand. Whip up a batch tonight.
No-Bake Chocolate Oatmeal Peanut Butter Cookies
Ingredients
- 2 cups sugar
- 4 tablespoons cocoa
- 1/2 cup milk
- 1/2 cup butter
- 3 cups oats
- 1/2 cup peanut butter
- 1 teaspoon vanilla
Instructions
- Cover two cookie sheets with wax paper.
- Combine the sugar, cocoa, milk, and butter in a large saucepan. Stir occasionally while bringing to a boil. Boil for one minute.
- Add the oatmeal, peanut butter, and vanilla. Stir until just combined. Turn off the heat.
- Using a spoon, drop the mixture in tablespoon-sized portions onto the wax paper-covered cookie sheets. There should be just enough room to fit all of the cookies onto two cookie sheets.
- Put the cookies into the refrigerator to cool. Once the cookies have cooled, you can store them in the refrigerator or in a sealed Tupperware container at room temperature.
