No-Bake Chocolate Oatmeal Peanut Butter Cookies

Is there any better flavor combination than chocolate and peanut butter? It’s hard to believe that there could be a more delicious pairing. However, adding oatmeal to the mix is pretty perfect, too. No-bake chocolate oatmeal peanut butter cookies would be worth a bit of effort. But they come together in a matter of minutes without even turning on the oven.

Jake’s paternal grandma made these no-bake chocolate oatmeal peanut butter cookies for decades. She was kind enough to send me her recipe. Now I’ve been making her recipe for over a decade. I’ve never added or swapped out an ingredient or attempted any other sort of variation. It’s one of those simple recipes that’s so good it doesn’t need any improvement.

The no-bake chocolate oatmeal peanut butter cookies are gluten-free. Gluten-free doesn’t mean healthy. But it does mean they’re a great option for a little indulgence if you’re eating gluten-free or you need a last-minute dessert for a classroom party or other social gathering with people in attendance who are eating gluten-free.

Usually, Apollo is my photography buddy. Hobbes was my photography buddy for this blog shoot. I photograph food every week for the blog or Instagram. But something about this cookie shoot was really exciting.

With or without a kitty helper, if you bake regularly, most likely you already have the ingredients to make these cookies on hand. Whip up a batch tonight.

Instructions
  1. Cover two cookie sheets with wax paper.
  2. Combine the sugar, cocoa, milk, and butter in a large saucepan. Stir occasionally while bringing to a boil. Boil for one minute.
  3. Add the oatmeal, peanut butter, and vanilla. Stir until just combined. Turn off the heat.
  4. Using a spoon, drop the mixture in tablespoon-sized portions onto the wax paper-covered cookie sheets. There should be just enough room to fit all of the cookies onto two cookie sheets.
  5. Put the cookies into the refrigerator to cool. Once the cookies have cooled, you can store them in the refrigerator or in a sealed Tupperware container at room temperature.
Recipe Notes

The cookies keep well right on the cookie sheets in the refrigerator or in a sealed Tupperware container at room temperature. They'll stay moist for 5-7 days.

I make my no-bake chocolate oatmeal peanut butter cookies with regular, creamy peanut butter. I recommend regular, not natural, peanut butter. Creamy or crunchy will work well.

Unless otherwise noted, I always bake with salted butter. I also always use soy milk for my recipes that call for milk. I have not tested them with any other type of milk.

I love a good chocolate and PB combo! And these are even better because no oven is required! (Which is perfect for me because half the time I make cookies, I end up eating more batter than anything else!)

    Your pictures look so inviting!

Yummy, I must try them ASAP!

These are one of my favorite cookies. I learned to make them in Junior high school home economics class and found the recipe again about 2 years ago.

Is there a substitute for peanut better in this recipe? Can’t stand it

    • Rose March 15, 2017, 10:01 pm

I’ve never made this recipe with a peanut butter substitute. But I think any sort of nut butter with a similar consistency would work all right.

  • Danielle March 16, 2017, 5:55 am

Pretty sure I would just eat that out of the pan… chocolate and PB is amazing!

  • Duni March 20, 2017, 10:57 am

These look yummy! I wonder if they would work with chunky peanut butter? I always have a jar of that at home 🙂

    • Rose March 20, 2017, 3:27 pm

Chunky peanut butter will definitely work! It will give the cookies even more texture. 🙂
