I know that spring entertaining can be a challenge because the weather is so unpredictable. Depending on where you live, through a lot of the spring, the weather may still be very cold. By the time it’s May, it may feel more like summer. You don’t want winter recipes anymore, but you’re also not in full-on summer party mode either.
I’ve focused on recipes with lots of fresh vegetables that have tons of color, flavor, and texture. You’ll find many spring versions of classic appetizers, including bean dips, vegetable boards, cheese boards, tortilla pinwheels, and flatbreads. Take advantage of fresh veggies and herbs whenever they’re available, and don’t skimp on the finishes, such as balsamic glaze and homemade salad dressing.
